Description
A festive trio of easy Cinco de Mayo desserts including churros, tres leches cake, and mousse cups—each perfect for sharing and celebration.
Ingredients
Churros:
1 cup water
2 1/2 tbsp sugar
1/2 tsp salt
2 tbsp vegetable oil
1 cup all-purpose flour
Cinnamon sugar for coating
Tres Leches Cake:
1 cup flour
1 1/2 tsp baking powder
1/2 cup unsalted butter
1 cup sugar
5 eggs
1 tsp vanilla
1 can each: condensed, evaporated, whole milk
Chocolate Mousse Cups:
1 cup heavy cream
1/2 cup dark chocolate
1/2 tsp cinnamon
1/8 tsp cayenne pepper
Whipped cream (for topping)
Instructions
1. Boil water, sugar, salt, and oil. Stir in flour until smooth. Pipe into oil and fry churros until golden. Roll in cinnamon sugar.
2. Preheat oven to 350°F. Cream butter and sugar, add eggs, vanilla. Mix in dry ingredients. Bake in a greased pan. Mix milks, pour over cake. Chill overnight.
3. Melt chocolate. Whip cream to soft peaks. Fold in melted chocolate, cinnamon, and cayenne. Pipe into cups. Chill and serve with whipped cream.
Notes
Make churros just before serving for best crunch.
Tres leches cake is best when chilled overnight.
Mousse can be made a day ahead and piped into jars for easy transport.
