Ingredients
1/2 cup cottage cheese
1 large egg
Optional: herbs, garlic powder, salt
Instructions
1. Add cottage cheese and egg to a blender.
2. Blend until completely smooth.
3. Heat a nonstick pan on medium-low.
4. Pour mixture into a circle like a pancake.
5. Cook 3-4 minutes per side until golden.
6. Cool on wire rack before folding or serving.
Notes
Strain cottage cheese if it’s too watery.
Add herbs or spices for flavor.
Freeze flatbreads with parchment between layers.
