Description
A bold and buttery chicken boil juicy crab recipe packed with Cajun garlic flavor and customizable spice.
Ingredients
3 lbs chicken thighs or drumsticks
3 sticks unsalted butter
2 tablespoons minced garlic
1 tablespoon Old Bay seasoning
1 tablespoon Cajun seasoning
1 tablespoon lemon pepper
1 tablespoon smoked paprika
1 teaspoon brown sugar
1 teaspoon chili powder
Juice of 1 lemon
2 ears of corn, cut into thirds
1 lb baby red potatoes
12 oz Andouille sausage, sliced
Salt and pepper to taste
Optional: hot sauce
Instructions
1. Boil chicken in seasoned broth for 30–40 minutes until tender.
2. Add corn and potatoes to pot during the last 15 minutes.
3. Melt butter in a saucepan, add garlic, then all seasonings.
4. Simmer sauce for 5 minutes after adding lemon juice and brown sugar.
5. Drain boiled ingredients and place in a large bowl or boil bag.
6. Pour hot sauce over everything and toss to coat.
7. Let rest for 5–10 minutes before serving.
8. Garnish with parsley and lemon wedges.
Notes
You can prepare the sauce ahead and refrigerate.
For a spicier version, increase cayenne or hot sauce.
Add boiled eggs or shrimp for variety.
